My sister sent me this recipe from my childhood yesterday. I was so happy to get it. My mom made these Peanut Butter Easter Eggs every year when I was growing up. They are really good. The recipe called for margarine, but I have substituted butter, and it still tastes the same. I hope you enjoy them.
Mom’s Peanut Butter Easter Eggs
9 oz. Peanut Butter
1 1/2 sticks of butter softened
1 lb. of powdered sugar
1 12 oz. bag of semisweet chocolate chips
1/4 bar of paraffin wax
Mix peanut butter & butter with mixer & then mix by hand with powdered sugar. Mix together like pie crust. Shape into egg shape and put on a cookie sheet lined with wax paper. Put into the freezer for 30 minutes. Prepare a double boiler with water on the the bottom and chocolate chips and wax in the top. When the chips and wax are melted, roll the egg shapes in the chocolate and put back onto the wax paper. Pop into the fridge until set. Enjoy!
